In my mind, I was thinking you could have script triggered by simply saying your class at the first weapons/armor shop. Armorer could just say something like "What class are you?" then "Ahh, a knight you say? Always in the heat of battle, your kind. For you, I would recommend blah bla...

I'm still early in, but you are correct. I assumed that the cracks would be filled in as development progresses, but it is true that it would probably be easier to fill in some additional content as you move forward...however I do think there is something to be said for creating the bones of the gam...
